Gluten Free Berry and Lemon Mini Donuts

TOTAL FUN TIME: 25 minutes 

Makes: 14 minis

RECIPE

  • 1 cup of gluten-free buckwheat or all purpose flour (I used buckwheat)
  • 1.5 teaspoon of baking powder
  • 1/2 teaspoon Himalayan pink salt
  • 1/4 teaspoon of nutmeg
  • 1/2 cup healthy sugar such as Natvia or Stevia
  • 1 tablespoon of fresh lemon zest
  • 1/2 cup non-dairy milk (oat, soy, almond, rice)
  • 1 teaspoon of organic vanilla extract
  • 1/2 cup mixed berries (fresh or frozen are both fine)
  • 2 tablespoons of fresh lemon juice (use the zested lemon)

METHOD

1. Preheat the oven to 180 degrees Celsius.

2. Combine and whisk the flour, half of the sugar, salt, baking powder, nutmeg and lemon zest in a mixing bowl.

3. Pour the milk, vanilla extract and add the berries to a blender and pulse sporadically to combine.

4. Mix the berry mixture into the flour bowl and stir well.

5. Carefully spoon the batter into a mini donut pan and bake for 10-15 minutes until golden.

6. Take the donuts out of the oven to cool.

7. Whisk the half of the sugar with the lemon juice and dip the donuts in the lemony glaze and enjoy!

Frozen Berry Yoghurt

Everyone is into the new craze of frozen yoghurts! Why? Well, the way that it has been marketed is that it is ‘healthy’ or at least ‘healthier’ than normal ice-creams and cold desserts. But have you ever wondered just how much sugars are actually in the highly processed frozen yoghurts? Not to mention the additional toppings you can add? You might as well consume a low-fat ice-cream dessert instead!

This frozen berry yoghurt not only has minimal amounts of sugars, but uses fresh or frozen berries and natural yoghurt. It’s really that simple – you could do it in your sleep!

RECIPE

  • 2 cups of organic natural yoghurt
  • 2 tablespoons of organic coconut sugar
  • 1 cup of your favourite berries (fresh or frozen)

METHOD

  1. In a small bowl combine all ingredients together until there is a smooth consistency.
  2. Place in a funky bowl or container of choice, cover and freeze for 1.5 to 2 hours.

Blueberry Chia Seed Pudding

 

This Blueberry Chia Seed Pudding really is one of a kind! It so refreshing yet filling that you can have it first thing in the brekky as an energising pick me up to get your day started, or to end a nutritious meal as a dessert! The layering of berries, yoghurt and chia seeds just tops it off, leaving your tastebuds wanting more!

RECIPE

Serves 2

METHOD

  1. In a blender, lightly blend the chia seeds, milk, half of the blueberries and coconut.
  2. Pour into a glass jar or container, cover and set overnight or for at least 5 hours in the fridge.
  3. Once set, layer the glass or container with yoghurt, passionfruit and strawberries (if desired).
  4. Top with the rest of the blueberries and any remainder coconut & enjoy!
