Dairy Free Chocolate Mousse

YES! You read right! Dairy-free chocolate mousse!  This recipe is so simple and mouth watering,  you’d think that it’s actually bad for you! BUT it’s NOT. Everything is made from scratch right down to the chocolate. Click on the link in the recipe below to make the chocolate from scratch. The smoothness of the coconut cream and the light fluffy texture is just amazing. You will make this dessert time and time again as you impress your friends time and time again! 😉

TOTAL FUN TIME: 30 minutes +  3-4 hours refrigeration time 

Makes: 6  servings

RECIPE

  • clean eating chocolate (click here for recipe), I also used the maple syrup version
  • 1 egg (separated) or egg alternative if vegan
  • 1/3 cup of coconut cream

METHOD

  1. Use chocolate mixture from the link and add the egg yolk and stir until well combined.
  2. Use an electric hand held beater to beat the coconut cream (works best if you put the cream in the fridge for a few hours prior, and just scoop the thick top part of the cream to use).
  3. Use a metal spoon to gently fold the cream into the chocolate mixture.
  4. Use the electric beater again (make sure that it’s clean!) and beat the egg white until soft peaks form.
  5. Fold the egg white into the mixture and pour into muffin liners or soufflé cups.
  6. Refrigerate for 3-4 hours or overnight and enjoy!

PS. you can add any additional flavours to your liking (ie. strawberry, brandy, mint etc.) the choices are endless!

Apple and Carrot Muffins

What’s not to love about apple and carrot muffins?! This recipe makes for a slightly sweet moist texture that dances with your taste-buds! If you enjoy carrot cakes and apple pies, this recipe is perfect for you! Have them as an afternoon snack with your favourite cup of tea! Or why not treat yourself at the start of the day as part of your breakfast?! It’s nutritious and filling!

TOTAL FUN TIME:      30 Minutes

Serves 9

RECIPE

  • 1 cup of gluten-free all purpose flour
  • 1 cup of almond meal
  • 1 cup of shredded carrots
  • 1 cup of shredded apple
  • 1/4 cup of Norbu or Natvia 
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of Himalayan salt
  • 1/4 cup of oil (olive, avocado or coconut) – coconut oil used in this recipe
  • 1 teaspoon of organic vanilla extract
  • 1 tablespoon of rice malt syrup (or agave/honey)
  • 2 free-range eggs

TOPPING

  • 3 teaspoon of Norbu or Natvia
  • 1 teaspoon of cinnamon

METHOD

  1. Pre-heat oven to 180 degrees Celsius.
  2. Mix the dry ingredients together (flour, almond meal, baking powder and soda, salt) in a bowl.
  3. Add the shredded carrot and apple and stir.
  4. Beat eggs in a separate bowl and add the oil, vanilla and rice malt syrup.
  5. Add the egg mixture to the dry ingredients and combine well.
  6. Line a muffin tray with muffin liners and fill them almost to the top.
  7. Place in the oven for about 15 minutes.
  8. Once done, sprinkle with topping mixture.

PS. I sprinkled the topping with the batter prior to placing in the oven and the sugars burnt easily, so best to sprinkle afterwards! 🙂

Red Velvet Mug CakeIf you love red velvet cake, you will love this healthy version which tastes abolutely amazing! And if you haven’t tried red velvet cake before? Might as well jump straight to the healthy version! 😉 Perfect portion size for one, and if you have company, just make sure you have  more mugs!

METHOD

  1. Combine all the cake ingredients and stir thoroughly to create a smooth consistency.
  2. Spray mug with coconut oil and pour the mixture in.
  3. Microwave for 90 seconds.
  4. For the frosting mix the Natvia with the cottage cheese.
  5. Turn the mug upside down on a serving plate and top with frosting.
  6. We topped with a fresh raspberry to add more spark! Enjoy! 🙂

Winter calls for all things warm and hot! What better way to indulge in a hot organic home-made, melt in your heart beverage?! This is so simple to make that you’ll be wanting to triple the servings sizes to share with friends or leave more for you! 🙂

  2. Stir for about 5-8 minutes until all dissolved.

Homemade Coconut Ice-Cream

Coconut Ice-Cream

There has been a recent craze over anything coconut. But is it really all it’s cracked up to be?! Found throughout the tropic and subtropic area, the coconut is known for its great versatility as seen in the many uses of its different parts. What better dessert than to create a coconut version?! If you love anything tropical, reminding you of hawaiian islands and extravagant yet luscious palm trees, why not start making this nutritional yet delicious dessert?!

TOTAL FUN TIME: 15 Minutes

(not including refrigeration time)

Serves  2

RECIPE

  • 2 cans (125ml) organic coconut milk
  • 1/2 cup of agave syrup or honey

METHOD

  1. Combine all ingredients together and whisk until a light and smooth consistency.
  2. Place in an ice-cream maker and let it work it’s magic.

Alternatively should you not have an ice-cream maker please follow the below steps: 

  1. Prepare your ice cream mixture, then chill it over an ice bath.
  2. Put a deep baking dish, or bowl made of plastic, stainless steel or something durable in the freezer, and pour your custard mixture into it.
  3. After forty-five minutes, open the door and check it.

As it starts to freeze near the edges, remove it from the freezer and stir it vigorously with a spatula or whisk. Really beat it up and break up any frozen sections. Return to freezer.

  1. Continue to check the mixture every 30 minutes, stirring vigorously as it’s freezing. If you have one, you can use a hand-held mixer for best results or hand-held mixer.
  2. But since we’re going low-tech here, you can also use just a spatula or a sturdy whisk along with some modest physical effort.
  3. Keep checking periodically and stirring while it freezes (by hand or with the electric mixer) until the ice cream is frozen. It will likely take 2-3 hours to be ready.

Finally scoop the ice-cream out into your favourite bowl, and sprinkle with cinnamon if you wish!

Carrot and Zucchini Cake with Coconut Frosting

When I first tried a slice of carrot and zucchini cake at work, made by a wonderful colleague of mine, my tastebuds landed instantly in heaven! Having tried just a plain carrot cake before and thinking that it must be semi-healthy as it has carrots in it right? Now trying the same just with more vegetables in it couldn’t make it any better! After finding a simple recipe for this devine carrot and zucchini cake I decided to embark on this wonderful baking experience.

Carrot and Zucchini Cake with Coconut Frosting

Due to my now health obsession, I have tweaked the ingredients to include all clean eating and nutritious ingredients. Even the icing/frosting is healthy, and mind you, mind-blowingly (if that’s a word) amazing! Let’s begin this wonderful baking journey!

TOTAL FUN TIME: 30 mins not including refrigeration time

Cake

  1. Pre-heat oven at 350 degrees.
  2. Combine all the dry ingredients then mix in the oil, eggs and vanilla until well blended.
  3. Mix in the zucchini and carrots.
  4. Pour into greased pan (15″ x 10″ is preferable).
  5. Place in the over for 35-40 minutes.
  6. Cool, then top with coconut frosting!

  1. Mix and stir all the ingredients in a consistent texture.
  2. Refrigerate for about 45 minutes then pour over the cake.
  3. Slice into preferred squares or rectangles and let your taste buds indulge!

Cacao Nib Oat Cookies

Cacao Nibs & Oat Cookies

 

Oats have been used for consumption purposes since the 1800’s and has numerous health benefits. Why not skip that oatmeal porridge for brekky and turn this lovely grain into a quick ‘go to’ brekky to compliment with your fav milk or tea? No one ever said brekky had to be boring! Oats not only have been known to lower cholesterol but reduce heart disease, so what are you waiting for?!

RECIPE 

Total FUN Time: 30 minutes

METHOD

Pre-heat oven to 180 degrees celsius

  1. Line a large baking tray with baking paper.
  2. Using an electric mixer or handheld mixer, beat the eggs white, butter and vanilla until consistent, then add the honey and continue mixing.
  3. Sift the flour, LSA mix and baking powder over the egg mixture, then add the oats and cacao nibs, salt and combine well.
  4. Roll spoonfuls of the mixture into balls, then place on the baking tray and flatten slightly.
  5. Bake for 12-15 minutes or until golden brown, cool on tray for 5 minutes then dig in!

Gingerbread Men

Gingerbread Men

Everyone loves Gingerbread Men! Well unless you absolutely dislike the taste of ginger, in which case you’re missing out. Although there are quite a fair amount of ingredients required, it really isn’t that time consuming to make. They are cute, fun and did we mention healthy?! Keep them in snack packs and take them to uni or work as a healthy ‘in between meals’ snack to keep you going with all the natural energy that you can only get from healthy goodness!

RECIPE

METHOD

Pre-heat oven to 180 degrees celsius

  1. Combine the almond meal, flour, ginger, cinnamon, nutmeg, baking powder, dates and vanilla extract in a food processor to create a crumbly consistency.
  2. Add the egg, oil and agave syrup or honey to the mixture.
  3. Process again in the food processor until it becomes dough like.
  4. Roll mixture into a large ball.
  5. Place gingerbread ball in the centre of a baking paper sprinkled with some flour.
  6. Flatten out the mixture with a rolling pin to roughly half a centimetre.
  7. Using a gingerbread man cookie cutter (or other shapes of your choice) cut out the shapes from the rolled dough.
  8. Continue to knead the excess to cut out more men (or shapes).
  9. Place the baking tray with the gingerbread men in the oven for about 7-10 minutes and enjoy after 10 minutes of cooling!   Continue reading
